I'd get down to Halfrauds and get a haynes, I did mine myself using Haynes but it was years ago and I can't remember the procedure. I do remember there was a fiddly/awkward bit, but that's not a lot of help to you I know! Sorry!
I did one recently, be warned tho, you will probably need a new bearing. I followed the Haynes method (0.99p on eBay :D)
and yes you do need to remove that 26mm cover thing.

ref steering rack : just buy a new bearing from the begining, couple quid and will save you so much time and ass ache, stick some paint or something on the 26mm bolt thread and locking nut so you know roughly where to do it back up to, to tight and you'll crack the alloy casting, easy enough to do though, would advise to loctite things in and do arms etc up nice and tight, dont want them coming loose now do we.
then once all back on the car, turn wheel full lock one way, turn back turn and a 1/4, take steering wheel off and put on straight and jobs a goodun
Seem to remember it being critical as to how tight you tighten the 26mm bolt before locking it up with the other nut -
Too tight and the steering is tight to turn - prematurley wears the pinion
Too slack and you get a knocking/free play when turning the steering !!!
Best to clamp the housing in a vise - spanner on the pinion to get a feeling of preload - before stripping to fit quick rack !!!

and the quick rack pinion should be no stiffer to turn with a spanner, is that correct?
where is the bearing that needs to be replaced? i mean - are you talking about the two at either end of the rack, before the steering arms?
nope, the big bearing on the pinion shaft, cant remember size of it off top of head

i managed my quickrack build like 3 years ago with haynes jobbie so should ahve no probs ols.
