if you're going up a tax bracket, they'll do you both the tax and V5c at the local office. Thats assuming you have adequate insurance and an MOT cert.
The order should be:
Insurance first and foremost (so you can drive to the MOT station)
MOT second (so you can then get tax)
Tax and V5c third (which you can do both together at the same time, at your local DVLA shop).
Dont forget to get a garage to write your engine number/and chassis number on it certifying it's correct etc, and has to be on HEADED paper not your own scribblings lol
i HAD to do this, or it was a no goer on mine before PV last year, then you have to re tax in the bigger bracket as they wont tax it as 1998cc until you have the correct V5, as i say i HAD to do this, and they wont do it any other way..

MOT doesn't check the condition of engine, clutch & gearbox though. I've never seen anything that states an MOT should be re-taken if the vehicle undergoes mechnical alterations.
