First of do you mean a 2lt or a 2.5 / 3.0 as they dont make a 2lt V6. To declare it you fill in the log book with your new engine number - job done.
Insurance is easy as 90% of all novs and corsa have 2lts in now and there are loads of companies out there that will give you a good price.
Tax you will have to pay the upper bracket assuming you declare it and mot's they will do the emissions on the engine but being a nova you can nearly always get away with not putting through a cat test.
If you want cheap easy power then 2lt, if your anal about being "different" then do a 1.6.
Actually WTF?

2.0 V6? I thought the Calibra V6's were 2.5....
Insurance should be fairly straightforward - have a look in the insurance forum to get a feel of which companies will cover you. Updating the log book is easy too, just write in the new engine number and capacity on the V5c, and post to the DVLA (takes about ~28 days for them to process it though).
MOT will be fine, the tester will be able to select exhaust gas limits on the machine. Tax will be ?185 a year at the moment, DVLA will send you the correct tax form come renewal time. If the car is currently taxed as <1549cc, I believe the DVLA will require you to cancel and take a refund on the existing tax, then start a new 6 or 12 month period as >1549cc.
Some people prefer small block 1.6's, but they are misguided and smell of wee :p

so if u register the engine as say a 2ltr is it just as easy to change it back on the logbook to say a 1.2
DVLA will require an inspection for going down in size.
