Firstly Stoo, I've used the search and read the haynes manual.

Does adjusting the idle mixture affect the main? If not, how do I adjust the carb please?

Cheers :).

what things have you checked?
choke adjustment?
float height/needle&seat?
fir filter?
blocked jets/emulsion tubes?

idle mixture doesnt effect the main. as its a separate circuit for idle fueling.

follow the haynes to adjust the carb. but you are wasting your time without a gas analyser or AFR meter/logger

The main circuit is adjusted by the jets etc.
Screw only adjusts the idle.

Wheres it running rich? All through the revs?

I've a really poor sense of smell, but I'm told it smells rich at idle, and if im giving it the beans at 5-6k rpm I can see smoke in the headlights of the car behind, but its not consuming oil or coolant.

i would be the one to rebuild/clean the carb and then set the mixture. if theres a problem with the float or a jet/accel enrichment valve, the trying to compensate using the mixture screw will result in tears. if no one has played or touched the mixture screw then its unlikely to have been out of adjustment by much, unless there is an underlying problem.
