What is the glue stuff called that is used to seal the wings to the body ?

most motor shops do it although some wont becuase the proper stuff cyanoacrylate (nasty - what they use in 2 pak paint).
you can use tiger seal or similar though just dont use silicone sealer - lol

And the best way to get the old stuff off ? I was thinking a bit of heat ?

Why not?
because it perishes and water will eventually penetrate it (not as good adhesion as proper stuff). It contaminates anything near it and if you try and paint anything it goes all scabby.
I've got so p1ssed off with my shower leaking in my new house and ruining the roof below I removed the "silicone" sh1te and injected expanding foam into the gaps then seamed it with boat building sealer - like sikaflex but much better!
