How they work?
what happens to the stuff it "catches"
does it need emptying or redirected into the engine some how?

Connects to the crankcase breather system, Any oil fumes coming into it will condense back into oil. Just need to keep an eye on the level of any oil in it (some have see-thru tubes on the side), Shouldn't have to empty it until you do an oil change.
