The guage will fluctuate depending whether you are going up/down hill, because of the where the sender is in the tank.

It just sounds to me like the sender is playing up, its a common fault.

a faulty sender wouldn't cause the car to splutter/stall e.t.c

could be a blocked fuel line or tank - or a combination of this and the Sender !

try running some red-ex - tank treatments e.t.c through it, it may beable to break down any deposits blocking the fuel lines - but it's a longshot

Sod redex, just stick a tank of optimax in there

Sounds to me like the tank is full of gunk which has clogged the fuel lines and has knackered the sender (dirty sender is a common fault on the ST205 too, easy to remove and clean though ). Do you often run it right down to empty? This would suck in the crud at the bottom of the fuel tank, and over time will build up in the fuel lines and carb (or fuel pump and injectors if injection engine).

Thinking about it, if it iis an injection, could it be an electrical fault? This could stop the fuel pump from pumping in the fuel right, hence spluttering/stalling, and would it affect the fuel level gauge?

Sounds like an electrical fault then. Assuming its a Mk2 (being injection) they have dicky hazard warning switches, might be worth investigating the contact pins are ok, or getting hold of a new one.
