You need a new clutch!

Yeah it takes the piss. On top of gearbox is the clutch release arm thingy (technical term). The clutch cable pulls on this via a rubber block. Pull the clutch cable towards you and pull it out of the clutch release arm. Now you can pull out the pin and wind out the rubber block. You can wind it out by loads which'll lower the clutch pedal. Just make sure that you don't wind it out so much that you can't release the clutch.

You need a new clutch!
My mk3 astra had a new clutch fitted and its bite point is right at the top of the travel.
I am told there is no way to adjust the bite point, there just adjustment to move the clutch pedal.
