should the baring move like in these four pics, ive moved it with my finger each time...

difficult to really tell from the pics but the inner bearing does normally have an in and out movement. though it should not be easily pulled out past the oil seal. when it is assembled there is a lip on the stub axel which seats it where it needs to be.

how easy is it to change a baring?

very. should be in the haynes.

have you any reason for changing them or is it just for peace of mind? either way, change both at the same time.

if the bearings are ok you should be able to get the seals individually from vaux, if they need changing, pattern bearing kits are fine.

have you changed both rear cylinders? I would.

I would advise that you strip & clean the bearings. Well to be honest, replacement bearing kits are really cheap from motor factors. What happens when you remove the hub/drum assy. is that the brake dust gets in around the bearings. If left there, it becomes a grinding paste & will wreck the bearings.
Looking at the pic. the brakes show signs that the self adjusters need a good cleaning & copper greasing.
