I want to get some 15s on my Nova, but the tyre offset is always 50. If my Nova has an offset of 49, does that mean I need a spacer? I know nothing...

If you using a 49mm offset wheel with 195/50/15 size tires you shouldn't need spacers.
tyres dont have offsets.
wheels do, but not tyres
are you thinking of the % aspect ratio of the tyre? lol

On websites and in shops, they always have info like this...
Wheel Size: 15" Tyre Size:195-50-15
So how do you know if it will fit?

I have found 1 site that says the ET number, but all of them are 45, so would that mean I need spacers?

no as someone has just said the "trye" does not have an offset its the metal bit "wheel" thats has an offset and 45 should be fine
