Rear cylinders OK? (as in not leaking)

What calipers are you running? Disc size? Standard drums?

you need to adjust up your rear shoes, then pressure bleed it all through about 4 times..

You can use a early Astra gte non abs. The mc will fit the servo you'll just need to make new brake lines. (they they are swapped around)
THey have a 2mm bigger bore so more fuild will move so should be better.

What brake fluid are you using?

Decent pads and fluid especially with all these track days you do mate

I had this problem on my rally car ! solved it by backing the handbrake full off, on the adjuster at the rear axle then adjusting/set the rear brakes up to the drum and then resetting/adjusting the hand brake, it worked spongy brakes gone.

Pushing all that fluid into the low specs won't be helping with pedal 'feel'
