What brakes fit under 15 inch wheels, whsts the biggest you can have? Thanks

Depends to a large extent on which type/style of 15" wheel you have.......and of course on the caliper design.
Typically a 288mm diameter disc is about as big as you can get away with, but it varies.
More information required on your wheel and brake combination, and there's a good chance someone on here will have done it already.
I just squeezed Vectra b 288mm discs and calipers under my 15" irmscher wheels. Wheel weight placement was critical though.
Hoping for some cav expressions! Brakes look 256mm i think but havent measued them yet

Vectra V6 288's with ATE (GM) fit under most 15's.
It's only a marginal improvement over 256's, taking into account the slave cylinder differences, which ideally you'd want to increase the master cylinder size (but isnt feasable)
