My engine will be getting rebuilt next year to a high spec, what engine management would I be best to use? Or will it just depend on who I want to map the car and what they prefer to use? What management are other people with let's using?

yes,
and depends on mods,trigger type, coil setup, rev limit, injector size/number/stageing, idle control, load sensing, extra features required, budget....
if it was easy, everyone would just use the same management.
Management is useless if the mapper has no idea how yo use it
Yup, go find a good mapper and then ask what uses

all ecu's are the same, +/- spark, +/- timing. its the trick bits like how it controls the extra bits like idle control, staged injectors, accel enrichment/enleanment. this is what takes the time. most decent mappers will be able to work it out, but it takes time...which costs you. some just cant be bothered learning a new obscure ECU for one simple mapping session. If the mapper gets frustrated by navigating your ECU you will likely end up with an inferior tune that takes twice as long as it would with an ECU he is used to.
it's in your intrest to ask around, find a good tuner who you have confidence in and ask him what ECU he suggests for your application and listen to him. if he is doing the install it will put another spin on the outcome. resolution is particularly useful if you are using large injectors across a relatively narrow rev/load range. but most modern systems have decent size tables with 500rpm or less intervals which is good enough for a track car/road hack

Very informative that, thank you :) I really don't know of any tuners up here tbh except one which I've heard alot of bad stories about so it won't be going there. Can anyone point me in the right direction to a reliable tuner?

Only two up our way are Wallace performance and Ricky gauld. Possibly Clark Motorsport but I don't think they have their engine dyno now.

Yeah Wallace is just round the corner from my work. I'll have to find someone capable of the job without ****ing my engine.
