I've ordered an oil temp and pressure gauge, so now I'm looking at fitting the senders.

I already have the GM twin switch sender in the normal place (which I intend to leave there) which leaves me with 2 other oil galleries. The LET oil return and a blank..

Would it be best to have both new senders from one gallery or separate ones?

I can get one of these which has 3 x 1/8npt ports

Or just 2 separate M14x1.5 > 1/8npt adaptors?

Also, is it best to put some PTFE tape round all the threads?

Would of though they'd be fine running off one union tbh.
Just don't over tighten it as its easy to split the thread/block there.

Agreed. They are dead head units anyway so nothing to be gained by having them separate.

my oil temp sensor is in one of those adapters, the sensor is quite long so doesnt actually tighten down in the threads, more bottoms out in the adapted. i have put PTFE tape around all my sensors/joins and havnt got any leaks......yet.
