195 shouldn't catch unless your wheel offset is completely wrong for a Vauxhall.
What wheels are they?
I've just had Toyo T1R's
Not tried them yet but there supposed to be ok, not sure if they do a 185 though.

hi mate,
there silver 5 spoke alloys and the centre caps say sport on them. the tyres on them at the moment are 195's and they rub on the rear arches only. so if i put 185's on them, they wouldnt run would they? cheers

Maybe not.
Your issue I would say is the wheels & not the tyres.
Nova wheel offset needs to be as close to 49mm as possible.
The further away from that figure the more the wheel sticks out closer to the arch unfortunately.

Ok, but for the time being, could i put 185 tyres on it and that would stop the rubbing until i get some new wheels? Cheers

Are the rear arches rolled?

I would get the arches rolled and get some small spacers/shims and put them in behind the wheels. That's what I do on my trackday Nova, I run 195-50-15's on it with either 3mm or 5mm spacers (cant remember which they are). Large choice of decent priced tyres as they are very common, will make it cheaper and easier in the future.
