Well you could paint the needle or change the background I suppose, maybe blank them off and guess you time/speed [dependant on which clocks you mean] also could change the bulbs I suppose.

On a mk2 dash you can fit a clock out of the mk2 astra which has numbers on it.

I polished off the dashes with some T-cut, painted the needle body coloured (blue) and put a thin piece of carbon in it, yes I really do need a good hobby lol

No mate dont think theres any other clocks that would fit in a mk1 dash.

I just used a table fork as a trim tool to remove them, or you could fit a change holder that if you put more than five coins in all fall out when you turn a corner lol
