As long as the crank has clearance it's ok

BUT the baffle helps keep oil in the sump. Also if you over fill with oil the oil can create drag on the crank,

Oil leaks with a baffle plate are common due to ****s over tightening sump bolts

How tight did you go?

Even hand tight can be too much!

Did you know the torque on a C20 LET head to turbo exhaust manifold is only 20Nm !

I bet you have over tightened the bolts causing squish and leaks,

just get the proper gaskets and use a really good gasket sealant. but the biggest thing it to make sure everywhere is clean & dry before you start.. you have to clean the block insides too, as there are all sorts of places where a drop of oil can sit, and it will affect the sealant.
