What the best product to use to spray your inlet mainfold with ?

Try something like: http://www.amazon.co.uk/Autotek-Aluminium-Aerosol-Quality-Spraypaint/dp/B004O932C6 Comes up slightly glossier and brighter than brand new ally.

Anything, does really get hot.

I would say anything unless its a V6 or a Td as the both seem to get rather toasty,.. the Hycoat Very High Temperature Paint is fantastic But if you want a shine you will have to apply lacquer to as its a Matt finish!
