1.6 MPI? e.g. E16SE or C16SE?

Yes, knowing what engine will help, 1.6 8v mpi? Spi? 16v?

small block 8v. And with regards to the exact engine whichever is goin to be easiest so please recommend the easiest one. Not after mega power just more than the 1.2 gives now.

1.6 8v MPI, Nova GTE/GSi engine is probably easiest and gives more power than the others (~100bhp).

Roughly:

Buy engine with loom, ECU, gearbox
Old one out and new one in, on same mounts (although worth renewing if knackered)
6/7 wires for the new engine loom - this has been covered a lot so have a search
Match up exhaust system (can buy complete 4-1 manifolds and 2" systems, or source one second hand that's been fitted to a GSi?)
MPI fuel pump, in-tank (since your SPI one is in-tank) from an Astra mk3 or similar

the spi - mpi wiring is trickier than carb to mpi, because of the original ecu, but it is still less than a days work

Spi wiring just lop it all off at the plug and pull the wires through, your then be left with a few wires ideal for wiring in the 1.6 loom or to use as alarm feeds etc.

is there another conversion i can do that doesnt involve the wiring part maybe a 1.4 spi just looking for a bit more poke without having to swap looms dont fancy attacking looms just yet

as long as you get the full engine loom from the efi on the e/c16se, the senders & starter wires are the same on your old one, then you only need to connect 5 wires.... it isn't like fixing the hubble telescope.....
