Right the headgasket has gone on the c25xe and need it fixing, would it be ok to just do the headgasket or is it best to get a full head set?

It's common practice to do everything you can while it's in bits. Full head set, head bolts, thermostat, water pump, cambelt etc. It could save you a lot of money in the long run if something goes wrong and it all needs to come apart again.

No, take it out and use a external cooler!

Oh and if the head gasket went across the water jacket and using water then get the head checked to see if it needs a skim, if it does make sure you do both!
