Well, assuming you get some in the correct offset (go for 45mm if fitting 17's - otherwise it'll catch on the inside of the rear arch/shock) and try not to get one's too wide, 7" is ideal.

The ammount of arch work will depend on whether it's a Mk1 or Mk2, and how much it's lowered by (to some extent).

Generally you'll need to cut the lip off (up to the weld, but don't cut through the weld, as then you'll have to re-weld the inner and outer arches, an this will also mean re-painting) on the rear arches. Make sure you seal the freshly cut metal properly, otherwise the arches will rust to fuck.

As for the front it varies - cut the lip off as for the rear, or (using a hammer and a plank of wood, or whatecer) fold it up and back on itself inside the arch.
Or you can get it professionally rolled.

If it still cathes, then you can get the arches flared out slightly.
