Javelin springs to mind. Even EVO magazine organise them.
Keep an eye out on here, as Donnington days seem to pop up when People like Olly book them.
javelin
book a track
Motorsport vision (MSV)
Gold Track
etc etc
Theres loads of places that do them.
Depends how far your willing travel though as to how many options you have

I good idea and way to get into them is airfield days which are very cheap and have little or nothing to hit.
I would recommend http://www.motorsport-events.co.uk/ all are within 2 hours travel from Heathrow. Used them many times and can't fault them.
Alternativly try these

edit- I'm to slow.
Motorsport events banned my car for being too loud! I found that they like people like Stupot and the flying carpet.
They say that they operate a 100db flyby limit but thats just not the case. Combe run a 100db flyby and Donnington a 98db flyby and I have ever had trouble at either circuit.
According to them my car (and I quote) "Sounded like a jet taking off!".
So this is a word or warning to anyone thinking about doing a track day with Motorsport events. If your car is even remotly loud I suggest you spend your hard earned cash elsewhere. They totally ruined my day out by constantly pulling the car off for noise (There where louder cars there as well). My car complyed with all their regulations yet I only got 10mins running at best.
You have been warned.
i wanna rry one of these too but dont want to look **** lol
