Your oil pump photo interests me.
My pump it doesn't look like the oil cooler sandwich plate comes off, yet you've clearly does... Wonder if there are two types.

Just unscrew the central threaded adapter (you will probably damage it) and discard it, the thread in the oil pump housing is the same as the original oil pump so the original sandwich plate will bolt on using the standard adapter.

They are all cast the same
Like I said remove the threaded adapter and use the original CLET sandwich plate that the oil cooler pipes with the CLET adapter with a new 'o' ring, when using an oil cooler.
You might have a pump with an angled aluminium adapter, undo the oil filter adapter, behind that is a second adapter bolt which clamps the two together with an 'o' ring seal.

Hhmm i'd had mine in bits. Took out the threaded bit the filter screws too (which is different to the Clet one as its a thread on a big plate you have to undo, its like a 23mm iirc) Took that off and then nothing.. Nothing else to take off or remove.
Looked at the casing and cause see anywhere it would come apart either...

Behind that plate is an adapter which takes a 14mm A/F (?) allen key, undo that and they should separate.
Post a picture of it.
