You don't find many black MK1 dashes coz they never came in black. Mine was brown but faded and I couldn't find matt brown paint.
I agree it's good to be different / unique but not to the point where things look disgusting and people make odd comments or possibly call you a chav.
At the end of the day it's you car dude so it's down to your taste and preference.
Have you thought about things like flocking? Maybe a Black flock with white detailing or grey detailng?

I'd personally have the body further up so the boobs are Tacho and speedo, safety first as always you'll be checking your speed and engine speed constatly which is a good thing. Then I'd have her *cough* ahem *cough* by the glove box
