Am i right in presuming on a C20XE the plug thing on the front of the sump is the low oil sensor??
If so, what do i connect it up to on the car loom? it is in a MK1 1.3SR

Yes.
Nothing, just cut the wire off.
Its for the multi function display in a mk3 astra etc.
